When I first started coming to Singapore in the 1970s, the best food – Chinese, Malay, Indian, or a blend of them all – was to be found at simple, stall-like restaurants, or sold cheaply by hawkers vending from carts. I have stopped dozens of times in front of hawkers for robust street-side portions of bak kut tey, the hearty, peppery pork rib soup created by Teochew coolies working along the Singapore River.
